Flour Tortillas
Ingredients:
- 2 teaspoons baking powder (10 ml)
- 1 1/2 cups (355 ml) warm water (110°F to 120°F)
- 1 teaspoon (5 ml) salt
- 4 cups (950 ml) all-purpose flour
- 2 tablespoons (30 ml) lard
Directions:
- Mix the flour, salt, and baking powder together in a mixing bowl. Knife in lard until the flour resembles cornmeal..
- Add water. Attach bowl & dough hook to mixer, turn to Speed 2 and mix until well blended.
- Divide the dough into 24 equal pieces and roll each piece into a ball..
- Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla.
- Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side.
- Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.
